Back It Up-Vlog Day #2

It’s day two, and I vloged about backing up files in two different places. Since everything is digital now if we only store our files in one place, if that place becomes corrupt or broken, that’s it! I just learned this in my growing process and I had a scare with it just a week ago…

If this is the first vlog that you are watching I am doing these videos for a 30 day blog challenge started by Tim King. I have a photography business so I want to both challenge myself to grow within the next 30 days and then I also hope someone can relate to the process, or gain more understanding on how to start from square 1 when creating a business.

I Died and Went to Breakfast Heaven.

Those who know me well know that breakfast is my favorite meal of the day and also a meal I could eat for all three meals. There’s something about an over medium egg that makes me light up when it oozes through the valleys of home style potatoes. The different options of drink alone make it a treat with the varieties like orange juice, water with lemon, coffee, tea, milk, latte, you name it breakfast can serve it to you. Then there are the sweet treats-it’s the only meal where you get to basically have desert as a meal. After saying that statement I now realize why the first meal of the day is my favorite. When we stayed at our hotel for Valentine’s Day I had the breakfast of my life. No joke. I think I even posed the question “Am I in heaven?”

An Italian Grandmother Would be Proud.

We have monthly dinners with a group of really good friends, and we have to make everything from scratch. It’s no joke, I even got in trouble once for bringing store made baklava to accompany my homemade Kunufe’ for mediterranean night.

This month we did Italian food and it was delicious. As I was planning what I was going to make the week of, I ended up having pasta almost all week because I really put myself into the character of an Italian Grandmother. I could smell the aromas of garlic, bread rising, and pasta dough kneading. I could hear myself talking a couple octaves higher than the soft spoken volumes I was used to.

A Simple and delicious dish we loved was a tomato cream sauce. You can serve over gnocchi (what we did) or regular pasta. (There’s a photo of the “dish” down below).

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 clove garlic, minced
  • 1 (14.5 ounce) can Italian-style diced tomatoes, undrained
  • 1 tablespoon dried basil leaves
  • 3/4 teaspoon white sugar
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1/2 cup heavy cream
  • 1 tablespoon butter

  1. In a saucepan, saute onion and garlic in olive oil over medium heat. Make sure it doesn’t burn. Add tomatoes, basil, sugar, oregano, salt and pepper. Bring to boil and continue to boil 5 minutes or until most of the liquid evaporates. Remove from heat; stir in whipping cream and butter. Reduce heat and simmer 5 more minutes.

My Car

My car broke down. Add some spark plugs and we’re good to go. I’m sitting in the car waiting for Adam and feeling content because I know that success is ahead and I am assured because I know where I am going.

I will not get tired, even when I am set back from where I am heading.
